Seafood HACCP Segment Two

This Association of Food and Drug Officials National Seafood HACCP Alliance Segment Two Course will meet the training requirements established under the U.S. Food and Drug Administration (FDA) mandatory seafood HACCP regulation (21 CFR Part 123). Attendees are required to take the Alliance Segment One Course on-line prior to attending this workshop. Upon completion of both courses, attendees will be able to: develop a seafood HACCP plan that is appropriate for a specific processor, in order to meet the requirements of Sec. 123.6(b); reassess and modify the HACCP plan in accordance with the corrective action procedures specified in Sec. 123.7(c)(5), the verification activities specified in Sec. 123.8(a)(1), and the hazard analysis in accordance with the verification activities specified in Sec. 123.8(c); and perform record review required by Sec. 123.8(a)(3). The course will be taught by Alliance-trained instructors and will review HACCP principles, the FDA regulation, and the FDA Hazards Guide. Attendees will work in groups to conduct a Hazard Analysis and develop a HACCP plan for a model seafood business given to you by the instructors. Attendees will be able to ask questions, get assistance, and apply what they learned in the Internet course.
To receive the Certificate of Course Completion from AFDO, attendees must complete the Segment One Internet course before the IAFP Workshop Segment Two class.
