U.S.-based company New Wave Foods’ synthetic shrimp product has a name and a new projected timeframe for release.
According to a report from The Times of Israel, New Wave intends to have its faux shrimp invention, called “Shr!mp,” on shelves at some point in 2017. The product is primarily composed of red-algae and plant-based protein powder, and has the attention of several kosher kitchens, who will serve the product as long as it gets the proper certification, the paper reported.
“Shr!mp” was incepted by New Wave mainly in response to growing concerns regarding the environment and human rights, noted one of the company’s founders, Dominique Barnes, in a profile for The Atlantic. The product offers up an avenue to “true sustainability” for the seafood industry, Florian Radke, a marketing specialist with the technology-driven food producer, told SeafoodSource in April.
“We truly believe that the real sustainable seafood can only happen if you cut the animals out of the equation,” he said.
